Hi All, I hope that you can help, I am trying to find out two things. The first is what power steering fluid I should use in my 2002 Fabia?
The second is : How can I tell if I have put enough in but not too much?

For pitys sake DO NOT use ATF.

The PAS system requires green mineral fluid the same as any other VAG vehicle (hence the green cap on the top). ATF will knacker the seals in the rack and the pump and it will not work correctly.
