Default Switching maps..?

I've been told that after a remap, it takes a while (hour or so) for the ECU to "re-learn".

Firstly, re-learn what? Surely the map instructs the system how to work rather than just making a suggestion? Is it tuning the settings based on fuel etc? Or is it tweaking based on driving style? And is this a one-off or a continuous process?

And secondly, with a switchable map, do the settings re-set and the box re-learn every time the map is switched?

It's called 'Adaptation'...

...basically the ECU requests the engine to work at a certain level, these levels are only achived if all of the engine sensors are working within their expected tolerances. So for example if the car get's really hot for whatever reason (sat on a rolling road, being absolutley thrashed, too high settings being run) then the ECU will 'correct' it's desired requests and the engine will run at a lower level.
You can feel it to some extent with temperature changes and the car behaving differently. Again with different fuel qualities.
When a car a remapped/programmed the ECU is reset so will take a certain amount of time to 'adapt' exactly as it does in standard mode when the battery is disconnected or it's serviced. So in reality adaptation is a continuous occurence and to some extent a safety parameter within the ECU.
When settings are altered within uprated software the adaptation isn't reset, settings will allow you to make the most of the cars potential and set it up to suit your requirements. A fixed level of software is often detuned or relies very much on the ECU to adapt to do the work and is to some extent as you say 'a suggestion'.
